Ping tung aubergine

Tue 1 Feb 22: it looks a little alien but it’s definitely an aubergine. It has a lower moisture content than the ‘standard’ fruit which means you don’t have to worry about drawing out the excess before you start cooking. Mrs J bought this at M&S who must reckon that it’s suitable ingredient for Chinese New Year cookery.
